Baked Cornmeal

Ingredients
2 tbsp Vegetable Oil
˝ Onion, finely chopped
75g/3oz Cornmeal
600ml/20fl.oz. Warm Milk
Salt
˝ teasp Sugar
2 Eggs, beaten
60nl/2fl.oz. Double Cream
˝ teasp Baking powder
Instructions
1. Preheat the oven to 170C, 325F, Gas Mark 3 and lightly grease a casserole
dish. Heat the oil in a large saucepan, add the onion and sauté, stirring, for
about 5 minutes until golden.
2. Reduce heat to medium-low add the cornmeal and stir until well coated.
3. Add the milk, salt and sugar and cook, stirring constantly, for about 15
minutes or until thickened.
4. Place the eggs, cream and baking powder in a small mixing bowl and mix well
then gradually add most of it to the cornmeal mixture stirring constantly.
Continue to cook, stirring, for 5 minutes or until very thick.
5. Pour into the greased casserole dish then drizzle the reserved egg mixture
over top and bake, uncovered for 1 hour or until golden. Serve hot.
