Colombian Cheese Arepas Recipe

Colombian Name:  Arepas con Queso

Serves 4     Hot   Vegetarian  Accompaniment  Bread Hors d’oeuvre   Appetizer   Starter   Gluten Wheat Free Eggless   Colombia  Sth America   South American  

Ingredients
300ml/10fl.oz. Warm Water
¼ teasp Salt
1 tbsp Brown Sugar
225g/8oz Cornmeal
100g/4oz Cheese e.g. Queso Blanco or mild Cheddar, grated
Oil for shallow frying

Instructions

 

1.  Place the flour, salt and sugar in a large mixing bowl and gradually add the warm water, mixing to form a stiff dough.

3. Add the cheese and knead the dough for a few of minutes then form into 8 balls. Flatten the balls to a thickness of no more than 12mm/ ½ -inch .

4. Heat a little oil in a large frying pan, add the arepas and fry for 3-4 minutes on each side until crisp and golden, turning 3 or four times.  Drain the cheese arepas on kitchen paper.
 

Serving Suggestions

Serve hot as an accompaniment to main courses similar to flatbreads

Can also be served cold as a starter with cold meats, cheeses or vegetables

 

Make Ahead

Can be made up to 24 hours ahead. Allow to cool then wrap in kitchen paper. Warm through in the oven or under a low grill

 

Freeze

Allow to cool, place between layers of clingfilm and freeze. Can be cooked from frozen in a hot oven for 10 minutes.

Fry  - To cook over a brisk heat, in oil or fat to obtain a good seal and colour.

Knead - A rhythmic action in dough making whereby one end of the dough is secured by the heel of one hand and  stretched away, then pulled back over the top. In bread making, two hands are use.
