Egg Butter Spread

50g/2oz Butter (at room temperature)
1. Place the eggs in boiling water and cook for 10 minutes.
2. Remove from the heat, drain the boiling water from the pan then fill with
cold water then remove the shells from the eggs and place in a medium size
3. Add the soft butter to the eggs then using a fork, finely mash, blending the
butter into the eggs. Season with salt.
Egg butter spread is traditionally served on Finnish Karelian rice pasties but
can also be used as a spread on canapés or in sandwiches.
