Ingredients
150g/+5oz shelled Pistachio Nuts
150g/+5oz shelled Almonds
1 tbsp Coriander Seed
1 tbsp Cumin Seed
½ teasp Dried Thyme
4 tbsp Sesame Seeds
¼ teasp Salt
Instructions
1. Preheat the oven to 200C, 400F, Gas Mark 6. Spread the nuts evenly on a large
baking sheet and spread the Coriander, Cumin and Sesame seeds on another baking
sheet. Place both in the oven and bake/toast for about 15 minutes.
2. Remove from the oven and allow to cool.
3. Place the toasted nuts, seeds, thyme and salt in a food processor and grind
using the pulse action, until the mixture resembles fine breadcrumbs, taking
care not to over process otherwise it may become a paste. The mixture should be
very dry and crumbly.
Serving Suggestions for Dukka
Sprinkled on salads or pasta
