Sweet Indonesian Soy Sauce recipe

Makes
approx 600ml/20fl.oz. Cold Vegetarian
Condiment Accompaniment

Indonesia Asia Asian Ingredients 200g/7oz
Dark Brown Sugar 60ml/2fl.oz.
Water 300ml/10fl.oz.
Dark Soy Sauce 1
teasp Star Anise Seeds 1
Bay Leaf 1
Garlic Clove, chopped 5cm/2-inch
piece Galangal or 2 teasp Ground Galangal Instructions 1.
Place the sugar and water in a saucepan and bring to the boil over medium heat,
stirring until the sugar dissolves. 2.
Increase the heat to very high and boil rapidly, uncovered for 5 minutes. Do not
stir during this time. 3.
Reduce heat to low add the remaining ingredients and simmer for 5 minutes.
4.
Remove from the heat, allow to cool then chill until ready to use.
Can be stored in sterilised bottles in the refrigerator for several
months. Use in all recipes calling for Kecap Manis or as a seasoning for stir-frys.
