Sweet Indonesian Soy Sauce Recipe


Veg CD ACC Indonesian 20mins plus cooling



Indonesian Name: Kecap Manis 


Makes approx 600ml/20fl.oz.    Cold  VegetariaCondiment  Accompaniment   Dairy free  Indonesia   Asia   Asian



200g/7oz Dark Brown Sugar

60ml/2fl.oz. Water

300ml/10fl.oz. Dark Soy Sauce

1 teasp Star Anise Seeds

1 Bay Leaf

1 Garlic Clove, chopped

5cm/2-inch piece Galangal or 2 teasp Ground Galangal



1. Place the sugar and water in a saucepan and bring to the boil over medium heat, stirring until the sugar dissolves.
2. Increase the heat to very high and boil rapidly, uncovered for 5 minutes. Do not stir during this time.
3. Reduce heat to low add the remaining ingredients and simmer for 5 minutes.
4. Remove from the heat, allow to cool then chill until ready to use.

Serving and usage suggestions

Use in all recipes calling for Kecap Manis or as a seasoning for stir-frys.
