BBQ Pear and Blueberry Parcels

Serves 4 Hot Vegetarian Fruit Barbecues Desserts Gluten Wheat free Eggless
Ingredients 4 Ripe Pears, peeled 2 tbsp Lemon Juice 1 tbsp Melted Butter 100g/4oz Fresh Blueberries 4 tbsp Brown Sugar Freshly Ground Black Pepper
Instructions
1. Cut the pears in half lengthways, remove the cores then brush all over with lemon juice.
2. Butter 4 large squares of double thickness aluminium foil with butter then lay two pear halves on each piece.
3. In a small bowl, mix together the blueberries and sugar then divide them between the pears and season with a very little black pepper.
4. Wrap the pears in the aluminium foil into secure parcels, place on the grill and cook over hot barbecue coals for 20 minutes until just soft.
