Satay Squid HT
BBQ MC 10mins plus marinating Serves 4 Hot Barbecue Main Course Seafood Dairy free Eggless
Ingredients 900g/2lb Squid cut into large-ish
pieces 1
x 426g/15oz Tin Coconut Milk
2 Garlic Cloves, crushed
6 tablespoons Fish Sauce
75g/3oz
Peanuts, crushed Juice of 1 lime
1 teaspoon sugar
1 teaspoon cayenne
Instructions
1.
Mix together the coconut milk and garlic
in a bowl then add the squid and mix well. Leave to marinate for 2-8 hours.
2. Place the remaining ingredients in
a small bowl and mix well. Place in the centre of a large platter and set aside.
3. Remove the squid from the marinade and either thread onto skewers or place in a hinged basket. Cook over very hot coals for 30 seconds only on each side basting with the remaining marinade. Do not overcook or they will become rubbery and inedible.
4. To serve - place the squid around the sauce on the platter and serve immediately. Each guest taking a piece of squid and dipping it into the satay sauce.
