Basil Polenta Veg HT BBQ HD 30mins plus cooling
Serves 4 Hot Vegetarian Hors d'ouevre Starter Barbecue Appetiser Gluten Wheat free Eggless
Ingredients 720ml/24fl.oz. Water or Stock Salt and Black Pepper 175g/6oz Polenta 4 tbsp freshly chopped Basil 25g/1oz Butter Olive Oil Fresh Basil sprigs to garnish
Instructions
1. Place the water or stock, salt and pepper in a large saucepan and bring to the boil.
2. Stir in the polenta, reduce the heat and cook, stirring, for 5 minutes until very thick.
3. Remove from the heat, add the butter and herbs and mix well.
4. Line a baking tray with parchment paper or lightly grease with oil, then spread the polenta evenly over the surface, about 12mm/1/2 inch thick. Set aside and allow to cool and set.
5. Once set, cut the polenta into 8 portions (either into squares with a knife or using a large biscuit cutter).
6. Brush with olive oil and cook over medium hot coals for 3 minutes on each side.
Serve hot with barbecued tomatoes or a chunky tomato sauce and garnished with basil sprigs.
