Chicken and
Mushroom Burgers HT MC BBQ 45mins
Serves 4 (8 small burgers)

Ingredients
1 tbsp Vegetable Oil
˝ Large Onion, finely chopped or grated
2 Garlic Cloves, crushed
˝ red Capsicum (sweet pepper), chopped
25g/1oz Mushrooms, chopped
25g/1oz fresh Breadcrumbs
450g/1lb Minced Chicken (raw)
1 teasp Freshly Chopped Thyme Leaves
1 tbsp Freshly Chopped Parsley
˝ Egg, beaten
Salt and Black Pepper
Instructions
1. Heat the oil in a large saucepan then add the onion, garlic and pepper,
and sauté for 2 minutes stirring.
2. Add the mushrooms and continue to
sauté for a further 2-3 minutes, turning from time to time. Remove the pan from
the heat and allow to cool completely.
3. Place the cooled vegetables together with the remaining ingredients in a
large mixing bowl and mix well, using your hands and squidging the mixture
together.
4. Form into 8 burgers, brush with a little oil then place oiled side down onto
the grill and cook over medium hot coals for approximately 15-20 minutes,
turning 2 or 3 times during the cooking period and brushing with a little extra
oil before you turn, until cooked through.
