Grilled Courgettes with  Mozzarella

Serves 4    Cold  Vegetarian  vegetables  herbs  Hors d'ouevre  Starter  Appetiser  Barbecue Gluten Wheat Free  Eggless



3 Courgettes (zucchini), cut lengthwise into 6mm/1/4-inch thick slices

2 tbsp Olive Oil


Black Pepper

1/4 teasp Wine Vinegar

1 Garlic Clove, crushed

1 tbsp freshly chopped Parsley

225g/8oz Mozzarella Cheese, cut into thick slices




1. Place the courgette slices in a large mixing bowl together with 1 tablespoon of the oil, 1/4 teaspoon salt, and some black pepper and mix well to thoroughly coat. 


2. Grill the courgette slices directly on the grill over hot coals for 8-10 minutes turning once, until tender and golden. 


3. Return to the bowl together with 1/2 tablespoon of the oil, some more salt, the vinegar, garlic, and parsley. Mix well and allow to cool a little.


4.  To serve - arrange the mozzarella slices on a serving platter, fanning them out in a circle. Drizzle  with the remaining  oil and sprinkle them with a pinch of pepper. Arrange the courgette slices  on the same platter, folding them in half as you go and tucking them between the slices of cheese.

Tips, Options and Substitutions


Using specialist bbq hinged baskets as shown on the left makes turning thin or small pieces of food much easier and ensures they don't fall through the grill onto the coals
