Skewered Mackerel Fillets HT MC BBQ 20mins
Serves 4 Hot Fish Alcohol Herbs Vegetables Main Course Barbecues Kebabs Skewers Brochettes Healthy Eating Gluten Wheat Dairy Free Eggless
Ingredients 4 tbsp Olive Oil 4 tbsp White Wine The juice of 1 Lemon 2 tbsp Freshly Chopped Oregano Salt and Black Pepper 8 Mackerel Fillets (about 150g/5oz Each) 2 Medium Onions, each cut into 8 wedges
Instructions
1. In a small bowl, mix together the oil, wine, lemon juice, oregano, salt and pepper until well blended.
2. Thread the fish fillets onto 8 wooden skewers, concertina fashion, skewering a wedge of onion at each end then place in a shallow dish and pour the oil mixture over the mackerel. Cover with clingfilm and refrigerate for at least 30 minutes, turning once or twice.
3. Remove the skewers from the dish, reserving the marinade, and cook over hot barbecue coals for 12-15 minutes, turning from time to time and basting with the reserved marinade. Serve immediately.
