Spiced Venison Chops  

HT  MC  BBQ 25mins plus marinating

Serves 4     Hot  Game  Meat  Alcohol  Herbs  Spices  Fruit Vegetables   Main Course  Barbecue  Gluten Wheat Dairy Free  Eggless



4 Large Venison Chops

Olive Oil

Salt and Black Pepper

For the Marinade

240ml/8fl.oz. Robust Red Wine

1 x 7.5cm/3-inch Cinnamon Stick, crumbled

1 Bay Leaf, crumbled

6 Juniper Berries, crushed

4 Cloves, crushed

A strip of Orange Rind

1/2 Onion, sliced




1. Place all the marinade ingredients in a large bowl and mix well.


2. Add the chops, turn to coat, cover and refrigerate for 4 hours, turning from time to time.


3. Remove the chops from the bowl, reserving the marinade, and cook over medium hot coals for 10 minutes on each side, basting with the reserved marinade from time to time. Serve hot.
