4 Large Venison
Salt and Black
Robust Red Wine
7.5cm/3-inch Cinnamon Stick, crumbled
Bay Leaf, crumbled
Juniper Berries, crushed
strip of Orange Rind
Place all the marinade ingredients in a large bowl and mix well.
Add the chops, turn to coat, cover and refrigerate for 4 hours, turning from
time to time.
Remove the chops from the bowl, reserving the marinade, and cook over medium hot
coals for 10 minutes on each side, basting with the reserved marinade from time
to time. Serve hot.
