Stuffed Squid Kebabs

2 Shallots, finely chopped
1 tbsp Olive Oil
2 Garlic Cloves, crushed
1 Chilli, deseeded and finely chopped
2 tbsp Freshly Chopped Parsley
1 teasp Freshly chopped Thyme Leaves
25g/1oz Fresh White Breadcrumbs

1. Heat the oil in a medium saucepan, add the onion and sauté for 3-4 minutes
until soft and golden.
2. Add the garlic, chilli, parsley, thyme breadcrumbs, lemon juice, salt and
pepper and cook for 2 minutes, stirring constant.
