Stuffed Squid Kebabs    


HT  MC BBQ 35mins

Serves 4      Hot Seafood Vegetables Herbs Barbecues  Brochettes  Main Course Eggless

2 Shallots, finely chopped
1 tbsp Olive Oil
2 Garlic Cloves, crushed
1 Chilli, deseeded and finely chopped
2 tbsp Freshly Chopped Parsley
1 teasp Freshly chopped Thyme Leaves
25g/1oz Fresh White Breadcrumbs
The Juice of ˝ a Lemon
Salt and Black Pepper
12 Squid Tubes, washed


1. Heat the oil in a medium saucepan, add the onion and sauté for 3-4 minutes until soft and golden.

2. Add the garlic, chilli, parsley, thyme breadcrumbs, lemon juice, salt and pepper and cook for 2 minutes, stirring constant.

3. Spoon the stuffing into the squid tubes and secure the open ends with toothpicks.

4. Thread stuffed squid onto 4 metal or wooden skewers, brush with olive oil and season with salt and pepper then cook over medium/hot barbecue coals for 8-10 minutes, turning and basting frequently.
