Ingredients
For the Marinade
120ml/4fl.oz.
Pineapple Juice
4 tbsp Soy Sauce
4 tbsp Brown
Sugar
1 tbsp Bourbon
Whiskey
Freshly Ground
Black Pepper
1/4 teasp Garlic
Powder
180ml/6fl.oz.
Vegetable Oil
Other
Ingredients
4 Salmon Filets,
skinned
Freshly chopped
Chives to garnish
Instructions
1. Place the
pineapple juice, soy sauce, brown sugar, bourbon, pepper, garlic powder and oil
in a mixing bowl and mix well.
2.
Place the filets in a shallow dish and pour the bourbon marinade over them.
Cover and refrigerate for at least 1 hour.
3. Remove the
filets from the dish, reserving the marinade and cook over medium coals for 5 to
7 minutes per side or until cooked through basting regularly with the marinade.
4. To serve -
transfer the fish to a warmed platter and garnish with the chopped chives. Serve
immediately.
