Barbecued Mullet with Thyme

Serves 4

Ingredients

   4 Red Mullet, cleaned and gutted

   2 tbsp Olive Oil

   1 tbsp Lime Juice

   1 tbsp Freshly Chopped Thyme leaves

   8 whole sprigs of Thyme

   Salt and Pepper

 

Instructions

 

1. In a small bowl mix together the olive oil, lime juice, chopped thyme, salt and pepper until well blended.

 

2. Make 2 or 3  diagonal cuts in each side of the fish and place two sprigs of thyme in the cavity of each  then brush liberally with the olive oil mixture working the oil into the cuts.

 

3. Grill over hot coals 15 -20 minutes, depending on the thickness of the fish, turning once and basting with the remaining olive oil mixture. Serve immediately.

Tips, Options and Substitutions

 

Using a special bbq fish basket as shown on the left makes cooking fish much easier as you can turn it without fear of the fish breaking up. You can get different individual sizes or larger ones which can take several smaller fish at a time.
