Barbecued Prawn Satay

450g/1lb Raw Prawns, shelled
For the Sauce
240ml/8fl.oz. Coconut Milk
1 teasp Salt
¼ teasp Ground Ginger
1 tbsp Brown Sugar
½ teasp Chili Powder
1 tbsp Soy Sauce
1 tbsp Lime Juice
Place all the sauce ingredients in a large bowl and mix until well blended.
Add the prawns and mix well. Leave to marinate at room temperature for 3
Remove the prawns from the sauce with a slotted spoon and thread onto skewers.
Cook over medium hot barbecue coals for 2 minutes on each side or until cooked through,
basting frequently with the remaining sauce. Serve immediately.
