Barbecued Rabbit  Recipe

   1 Young Rabbit, jointed

   100g/4oz Mushrooms, chopped

   2 Garlic Cloves, crushed

   1 teasp Freshly Chopped Parsley

   1 teasp Freshly Chopped Chives

   4 Juniper Berries, crushed

   2 tbsp Oil

   1 tbsp Gin

   Salt and Black Pepper




1. Make deep incisions in each joint with the tip of a sharp knife and place the


2. Sprinkle  the chopped mushrooms over the rabbit joints.


3. In a bowl, mix together the remaining ingredients until well blended then pour over the rabbit joints. Mix to coat thoroughly then leave to marinate for 2 hours, turning the pieces from time to time.


4. Cook over medium hot coals for 15 to 20 minutes or until cooked through, turning from time to time and basting with the remaining marinade. Serve hot.
