Barbecued Sea Bass with Fennel Recipe

Serves 4    Hot  Barbecue  Fish  herbs  Vegetables  healthy Eating  Main Course Gluten Wheat Dairy free Eggless



1 large Sea Bass, cleaned and gutted

1 teasp Fresh Fennel Leaves, chopped

A few whole Fennel Leaves

60ml/2 fl.oz. Olive Oil





1. Make 3 or 4 diagonal cuts in both sides of the fish, about 1cm/ inch deep. Season the fish with salt,  both inside and out and place the whole fennel leaves in the cavity.


2. In a small bowl, mix together the olive oil and chopped fennel then brush this over both sides of the fish working it into the cuts.


3. Grill over hot coals for 8-10 minutes on each side, depending on the thickness of the fish, turning once and basting with any remaining olive oil. Serve immediately.

Tips, Options and Substitutions


Using a special hinged fish basket as shown on the left makes cooking fish much easier as you can turn it without fear of the fish breaking up. You can get different individual sizes or larger ones which can take several smaller fish at a time.
