Barbecued Sweet Potato Veg BBQ HT ACC 50mins
Serves 4 Hot Vegetarian Barbecue Vegetable Accompaniment Gluten Wheat Free Eggless
Ingredients 4 Small Sweet Potatoes, scrubbed Olive Oil Butter to serve Grated Cheddar Cheese to serve
Instructions
1. Brush the sweet potatoes lightly
with a little of the oil then wrap individually in sheets of heavy duty
aluminium foil.
2. Place the potatoes on top of hot coals and cook for about 40 minutes
(depending on size
and heat of barbecue) until tender, turning from time to time.
3. To serve - partially
unwrap, split open each potato and serve with butter, salt, freshly ground black
pepper and grated cheese.
