Barbecued Trout with Parsley

4 Whole Trout, cleaned and gutted

90ml/3fl.oz. Olive Oil

4 tbsp Freshly chopped Parsley

2 Garlic Cloves, crushed

The juice of Lemon

Salt and Pepper




1. In a small bowl, mix together the parsley, olive oil, lemon juice, garlic, salt and pepper until well blended.


2. Brush the olive oil mixture over both sides of the fish and place the remaining olive oil with its bits inside each cavity.


3. Grill over hot coals for 10 minutes, depending on the size of the fish, turning once. Serve immediately.

Tips, Options and Substitutions


Using a special hinged fish basket as shown on the left makes cooking fish much easier as you can turn it without fear of the fish breaking up. You can get different individual sizes or larger ones which can take several smaller fish at a time.
