Barbecued Trout with Parsley

4 Whole Trout, cleaned and gutted
90ml/3fl.oz. Olive Oil
4 tbsp Freshly chopped Parsley
2 Garlic Cloves, crushed
The juice of
Salt and Pepper
1. In a small bowl, mix together the parsley, olive oil, lemon juice,
garlic, salt and pepper until well blended.
2. Brush the olive oil mixture over both sides of the fish and place the
remaining olive oil with its bits inside each cavity.
3. Grill over hot coals for 10 minutes, depending on the size of the fish,
turning once. Serve immediately.
