Ingredients
225g/8oz Halloumi Cheese, Cut into 2.5cm/1 inch cubes
450g/1lb Boiled Small New Potatoes,
Salt and Black Pepper
Olive Oil
For the dressing
3 tbsp Olive Oil
1 tbsp Wine Vinegar
1 teasp Finely grated Lemon Peel
1 tbsp Finely chopped Green Olives
1 tbsp Freshly chopped Coriander
Leaves
1 Garlic Clove, crushed
1 teasp Mustard
Salt and Black Pepper
Salad leaves to serve
Instructions
1.
Thread the cubes of Halloumi and potato alternatively onto skewers.
2.
Lightly brush with oil and sprinkle with salt and pepper.
3.
Cook over medium hot barbecue coals for 2-3 minutes only, turning from time to time.

4. Meanwhile combine all the dressing ingredients
together in a small bowl and mix well.
5. Serve the kebabs on a bed of salad leaves, and
drizzle with the dressing. Serve immediately.
