Lemon Bulgur Wheat Salad Veg CD PIC ACC 25mins plus standing
Serves 4
Cold
Vegetarian
Ingredients 100g/4oz Bulgar Wheat 2 tbsp Lemon Juice 1 tbsp Olive Oil 2 Tomatoes, chopped 75g/3oz Ready to Eat Dried Apricots, chopped Freshly Chopped Mint Freshly chopped Parsley Black Pepper 4 Spring Onions, finely sliced
Instructions
1. Place the cracked wheat in and bowl and add twice its volume of boiling
water. Cover tightly and leave for about 20 minutes until the water has been
absorbed. Allow to cool a little.
2. Add the lemon juice and oil, season with pepper and mix well then leave
for 1 hour or until the cracked wheat has absorbed the dressing and has cooled
completely.
3. To serve - add the tomatoes, apricots, spring onions, parsley and mint
just before serving. Blend thoroughly.
