Lemon Duck   

 

HT     BBQ   MC  55mins plus marinating

  

 

Serves  4    Hot    Game  Poultry  Vegetables  Spices  Barbecue   Main Course   Dairy Free  Eggless

  

Ingredients

4 Duck quarters

4 Spring Onions, finely chopped

1 teasp Freshly grated Ginger

2 teasp Ground Turmeric

2 tbsp Dark Soy Sauce

1 teasp Sugar

1/2 teasp Finely grated Lemon Rind

Salt and Black Pepper

 

Instructions

  

1. In a large bowl, mix together all the ingredients apart from the duck until well blended.

  

2. Add the duck pieces and leave to marinate for at least 4 hours.

  

3. Cook the duck over hot coals for a total of 40 minutes, turning from time to time and basting with any remaining marinade or a little oil . Serve hot.
