Mangetout and Sweetcorn Parcels

Serves   4    Hot    Vegetarian    Vegetables  Accompaniment  Barbecue   Gluten Wheat Free  Eggless




1 large Onion, sliced

100g/4oz Baby Sweetcorn

100g/4oz Mangetout

50g/2oz Butter

Salt and Pepper

4 tbsp Water





1. Divide the onion slices into rings and place in the centre of 4 large squares of aluminium foil.


2. Place the baby corn on top of the onions and top with the mangetout. Place   of the on top and sprinkle 1 tablespoon of water over each.


3.   Bring together the four corners of each foil square and fold over the edges, squeezing firmly, to create parcels.


4. Place on the grill of the barbecue and cook for 20 minutes or until the corn is just tender. Serve hot.
