Skewered Pork with Mushrooms

Serves 4      Hot   Pork  Vegetables  Herbs   Main Course  Barbecue  Kebabs  Brochettes  Gluten Wheat Dairy Free  Eggless

 

 

Ingredients

450g/1lb Pork Fillet

4 tbsp Olive Oil

2 Garlic Cloves, crushed

Salt and Black Pepper

24 Button Mushrooms

24 Fresh Sage Leaves

 

 

Instructions

 

1. Cut the meat into 2.5cm/1 inch square cubes and place in a large mixing bowl together with the garlic, olive oil, salt and pepper.  Mix well.

 

2. Thread onto 4 skewers, alternating with the bay leaves and mushrooms.

 

3. Cook over hot coals for 15-20 minutes, turning occasionally and basting with the remaining oil. Serve immediately.
