2 tbsp finely chopped Onion
3 tbsp Tarragon Wine Vinegar
6 tbsp Olive Oil
1 Bay Leaf
1 teasp Freshly chopped Oregano
1 teasp freshly chopped Basil
9 tbsp Dry sherry
4 Lamb Steaks
1. In a small bowl, mix together all the ingredients except the meat.
2. Place the meat in a shallow dish and pour the marinade over. Mix well
to coat, cover and marinate for 2-6 hours at room temperature.
3. Remove the meat from the marinade and cook over hot coals
for 25-35 minutes, turning occasionally and basting with the remaining marinade.
