Stuffed Mackerel Parcels

Ingredients
4 Mackerel,
gutted, head removed and washed
2 tbsp Lemon Juice
For
the stuffing
25g/1oz Butter
4 Sticks Celery, chopped
2 Onions, chopped
50g/2oz Sultanas
25g/1oz Fresh White Breadcrumbs
Salt and Pepper
Instructions
1. Melt the butter in a pan, add the celery and onion and sauté gently
until soft.
2. Place the onion mixture in a mixing bowl together with the remaining
stuffing ingredients and mix well.
3. Sprinkle the fish inside and out with the lemon juice, salt and pepper
then stuff each fish with the breadcrumb mixture.
4. Place each mackerel on a large square of buttered aluminium foil and
wrap loosely. Be sure to seal the edges well to prevent the juices running out
during cooking.
5. Cook on the grill over hot coals for about 20 minutes
or until the fish is cooked through. Serve immediately straight from the
parcels.

food around, and prevent sticking. It is important not
to overfill the pan.
