Summer Burgers HT Veg
BBQ MC
25mins plus cooling
Serves 4 Hot Vegetarian Vegetables Herbs Main Course Barbecue Eggless
Ingredients
225g/8oz Firm Tofu, drained
100g/4oz Sun Dried Tomatoes, finely
2 tbsp Freshly Chopped Coriander
1/2 teasp Dry Mustard
2 tbsp Soy Sauce
1 teasp Tomato Puree 25g/1oz Fresh Breadcrumbs
Salt and Black Pepper
1 tbsp Olive Oil
1 Medium Onion, finely chopped
1 Garlic Clove, crushed 100g/4oz Mushrooms, finely chopped
Seasoned Flour to coat
Instructions
1. In a bowl, mash together the tofu, sun dried tomatoes, coriander, mustard, soy sauce, tomato puree and breadcrumbs. Season well with salt and pepper. Set aside.
2. Heat the oil in a frying pan add the onion, garlic and mushrooms and sauté until softened.
3.
Add to the tofu mixture, mix well and allow to cool.
4.
Shape the mixture into 4 large burgers, adding a little flour if too wet.
5.
Coat with seasoned flour and chill until ready to use.
6.
Brush each burger lightly with oil. Cook over medium hot coals for 4-5 minutes
