Tomato and Courgette Kebabs

Ingredients
4 Medium Courgettes
16 Cherry Tomatoes
Melted Butter to baste
50g/2oz Grated Parmesan Cheese
1 teasp
finely chopped Fresh Oregano or Basil
Salt and Black Pepper
Instructions
1. Bring a large pan of salted water to the boil, add the whole courgettes
and cook for 5 minutes. Drain well then cut each courgette into four pieces
widthways.
2. Thread the courgettes and tomatoes alternately onto 4 small skewers and
brush with a little melted butter.
3. Cook over medium hot coals for 7-10 minutes, turning once or twice and
basting frequently
with melted butter.
4. To serve - transfer to plates and sprinkle with the parmesan, oregano,
salt and black pepper. Serve immediately.
