tbsp Vegetable Oil 2
Garlic Cloves, halved 2
Onions, finely chopped 405g/1lb
Stewing Steak, cubed 2
Sweetcorn, cut into 2.5cm/1-inch slices 225g/8oz
Pumpkin, peeled and cubed 225g/8oz
Potatoes, peeled and cubed 600ml/20fl.oz.
Fresh Beef Stock 225g/8oz
Long Grain Rice 2
Tomatoes, chopped 1
tbsp freshly chopped Parsley 2
Green Capsicums (sweet peppers) chopped
Instructions
1.
Heat the oil in a large saucepan, add the garlic and onion and sauté until
softened. 2.
Add the beef and brown on all sides. 3. Add the remaining ingredients, mix well, bring to the boil then reduce the heat, cover and simmer for at least 1 hour, adding more stock or water as necessary. Serve hot.
