Ceylonese Beef Stew

Serves 4 Hot Beef

Ingredients
25g/1oz Compressed Tamarind Pulp
150ml/5fl.oz. Boiling Water
½ teasp Chilli Powder
½ teasp Ground White Pepper
1 teasp Salt
½ teasp Ground Turmeric
1 x 5cm/2-inch Cinnamon Stick
1 x 7.5cm/3-inch Stick Lemon Grass
450g/1lb Stewing or Braising Beef, cut into 5cm/2-inch cubes
Instructions
1. Place the tamarind in a small bowl pour over the boiling water and leave to
soak for 20 minutes.
2. Strain the tamarind water into a pan (discarding the pulp) then add the
chilli powder, pepper , salt, turmeric, cinnamon stick and lemon grass, mix well
and bring to the boil.
3. Add beef cubes, reduce the heat, partially cover and simmer very gently for
about 1 ½ hours or until the meat is very tender and the gravy has reduced
thickened.
Remove the cinnamon stick before serving.
