Crispy Chilli Beef 1      HT  MC  Indonesian  60mins plus cooling

 

Indonesian name: Sambal Balado

 

Serves 4   Hot  Meat  Main Course  Gluten Wheat Dairy Free  Eggless  Indonesia  South East Asia  Asian  

 

NB: If serving as part of a traditional Indonesian meal, i.e. a rice/noodle dish plus 2-3 other dishes, reduce the quantity of beef to 450g/1lb

 

Ingredients

675g/1-1/2lb Beef Topside

480ml/16fl.oz. Water

6tbsp Peanut or Vegetable Oil

1 Onion, thinly sliced

8 Garlic Cloves, peeled and thinly sliced

3 tbsp Hot Chili Paste or Sauce (check ingredients)

Salt

200g/7oz Tomatoes, chopped

 

Instructions

 

1. Place the beef and water in a large saucepan, bring to the boil, then reduce heat and simmer for 20 minutes.

 

2. After the cooking time, drain the beef  and set aside to cool.

 

3. Once cold enough to handle, slice the beef as thinly as possible, then cut into 5cm/2-inch squares. Dry with kitchen towels.

 

4. Heat half the oil in a large frying pan, add the dried beef slices and fry for 5 minutes , turning from time to time, until the beef is browned and dry. Remove with a slotted spoon and set aside.

 

5. Wipe the frying pan out with kitchen towels then heat  the remaining oil in the frying pan, add the onions and garlic and stir fry for 3 minutes.

 

6.  Add chilli paste or sauce, salt and tomatoes, mix well and cook for 5 minutes.

 

7.  Return the beef to the pan and stir-fry for 5 minutes. Serve immediately.
