Fricassee of Veal with Paprika HT

Ingredients:
1kg/2lb
boned shoulder of Veal

tbsp Olive Oil
25g/1oz
Butter
2
Onions, chopped
Bouquet
Garni
Salt
and Black Pepper
2
teasp Paprika (check ingredients)
150ml/5
fl.oz. Dry White Wine
175g/6oz
Peas
175g/6oz
Button Mushrooms, halved
Instructions
1.
Cut the meat into 25mm/l inch cubes and reserve. Heat the olive oil and butter
in a large frying-pan, add the finely chopped onions fry until soft. Remove from
the pan with a slotted spoon and reserve.
2.
Add the meat to the pan and fry until the cubes are slightly browned on all
sides. Add the bouquet garni and season to taste with salt and freshly ground
black pepper. Continue to cook, stirring from time to time, for 10 minutes.
3.
Sprinkle the paprika over the meat and onions and cook for 2-3 minutes more,
then pour in the wine and cook for 10- 15 minutes until the veal is tender. Add
the peas and sliced mushrooms and cook for a further 10 minutes.
