Skillet Stew HT MC 55minsServes 4 Hot Beef Vegetables Alcohol Main Course Ingredients 450g/1lb Minced Beef 1/2 large Onion, finely chopped 1 Garlic Clove, finely chopped 2 tbsp freshly grated Parmesan 4 slices White Bread 60ml/2 fl.oz. Milk 2 Eggs, beaten Salt and Black Pepper 6 tbsp Olive Oil 1 Onion, sliced 1 Green Capsicum. Sliced 1 Large Carrot, sliced 1 Stick Celery, sliced 420ml/14 fl.oz. A well flavoured Tomato Sauce 150ml/5 fl.oz. Dry White Wine
Instructions 1. Place the minced beef, finely chopped onion, garlic and grated Parmesan cheese in a bowl and mix thoroughly. 2. Trim the crusts from the bread. Soak the slices in milk, then squeeze dry and shred the bread into the beef mixture. Add the beaten eggs and mix well. Season generously with salt and freshly ground black pepper. 3. Form the meat mixture into 24-36 balls. In a wide, flameproof casserole, heat the oil and sauté the meat balls in batches, adding more oil as needed and turning them until browned. Using a slotted spoon remove the meat balls from the pan and reserve. 4. Away from the heat, stir 1 tbsp water into the juices in the pan. Return the pan to the heat and add the sliced vegetables. Simmer the vegetables for 5-10 minutes over low heat until soft. Then return the meat balls to the pan and season to taste. 5. Pour in the tomato sauce and white wine and simmer gently for 30 minutes. Correct the seasoning and serve.
