Ingredients 225g/8oz Plain Flour 1 teasp Baking Powder 1/2 teasp Cinnamon 15g/1/2oz Butter 100g/4oz Granulated sugar 450g/1lb Grated Coconut 1/2 teasp Vanilla Essence 1 Egg
Instructions
1. Preheat the oven to 200C, 400F, Gas mark 6 and grease some baking trays. In a large bowl, mix together the flour, baking powder and cinnamon and sieve a few times.
2. Rub in butter till mixture resembles fine bread-crumbs then add the sugar and mix well.
3. Stir in the coconut until well blended.
4. Add the vanilla essence to the egg and lightly beat then add to the flour mixture mixing well. This is best done with a cutting action using a knife. Continue to mix to a stiff dough.
5. Drop spoonfuls of the mixture about the size of an egg, onto the baking trays and bake for 15-20 minutes or until browned. Cool on wire racks.
