Ingredients
175g/6oz Butter or
Margarine
175g/6oz Caster Sugar
225g/8oz Self-Raising Flour
2 large Eggs, beaten
125g/+5oz Chopped Dates
50g/2oz Grated Orange Peel
4 teasp milk
1 teasp Coffee Essence
Instructions
1. Preheat the oven to 200C, 400F, Gas Mark 6 and lightly grease a 16cm/6-inch
cake tin.
2. In a large
mixing bowl, cream together the butter and sugar until pale and fluffy.
3. Add the beaten eggs to the margarine mixture a little at a time, beating well
between each addition.
4. Gradually fold in the self-raising flour then add the dates, orange
peel and coffee essence together with enough milk to form a smooth consistency.
5. Pour into
the greased cake tin and bake for 45 minutes. Cool on a wire rack.
