Coffee Date cake    Veg  CD  CBF  65mins plus cooling


Makes 1 x 16cm/6-inch cake     Cold  Vegetarian  Fruit  Cakes Baked Fayre  Teatime

 

Ingredients

175g/6oz Butter or Margarine
175g/6oz Caster Sugar
225g/8oz Self-Raising Flour
2 large Eggs, beaten
125g/+5oz Chopped Dates
50g/2oz Grated Orange Peel
4 teasp milk
1 teasp Coffee Essence


Instructions


1. Preheat the oven to 200C, 400F, Gas Mark 6 and lightly grease a 16cm/6-inch cake tin.

 

2. In a large mixing bowl, cream together the butter and sugar until pale and fluffy.


3. Add the beaten eggs to the margarine mixture a little at a time, beating well between each addition.


4. Gradually fold in the self-raising flour  then add the dates, orange peel and coffee essence together with enough milk to form a smooth consistency.


5.  Pour into the greased cake tin and bake for 45 minutes.  Cool on a wire rack.

Bake - To cook in an enclosed oven

Beat To introduce air into a mixture using a utensil such as a wooden spoon, fork or whisk, in order to achieve a lighter texture.

Cream - to - The process where sugar and softened butter are beaten together with a wooden spoon, until the mixture is light, pale and well blended. This process may also be carried out with a hand held mixer or in a food processor.

Rub in -  The incorporation of fat into flour.  Butter is cubed then gently rubbed between the thumb and forefinger, lifting the mixing at the same time, until the fat is fully incorporated and the mixture resembles breadcrumbs.
