Cranberry Bannock

Ingredients
150g/+5oz Plain Flour
225g/8oz Whole Wheat flour (approx)
2 tbsp Baking Powder
1 tbsp Sugar
½ teasp Salt
100g/4oz Butter
240ml/8fl.oz Milk
50g/2oz Cranberries, halved
Instructions
1. Preheat the oven to 220C, 425F, Gas Mark 7. Place the flours, baking powder,
sugar and salt in a large mixing bowl and mix well.
2. Rub the butter into the flour mixture with your fingertips until mixture
resembles breadcrumbs then stir in the cranberries.
3. Gradually add the milk and mix to form a soft dough.
4. Form into a circle about 2.5cm/1-inch thick on a baking sheet then score into
8 wedges cutting almost but not completely through.
5. Sprinkle with a little extra flour an bake for about 30 minutes until lightly
browned. Serve warm or cold.
