Vegetarian Dried Fruit Baked Fayre
Indonesia South East Asian Asian Ingredients 400g/14oz
Plain Flour 1
teasp Baking Powder 1
tbsp Sugar 150g/+5oz
Currants 1½
teasp Salt 240ml/8fl.oz.
Buttermilk Instructions 1.
Preheat the oven to 200C, 400F, Gas Mark 6 and lightly flour a baking tray.
Place the flour, baking powder, sugar, salt,
and currants in a large bowl
and mix well. 2.
Add the buttermilk, mix well then
knead the dough in the bowl for a couple of minutes. 3.
Turn the dough out onto a lightly floured work surface and shape
into an 20cm/8-inch round. 4. Transfer to the baking tray, cut a cross into top with a sharp knife and bake for 40 minutes, until golden brown and sounds a hollow when tapped. Cool on a wire rack.
