Lime Biscuits���� Veg CD CBF 35mins plus cooling

Makes about 30��� Cold Vegetarian Cookies� Baked Fayre��

Ingredients

225g/8oz Plain Flour
1 teasp Baking Powder
A pinch of Salt
100g/4oz Butter, softened
275g/10oz Granulated Sugar
1 Whole Egg�

1 Egg Yolk
5 tbsp fresh Lime Juice
2 teasp Grated Lime Zest
Icing Sugar

Instructions

�

1. Preheat the oven to 180C, 350F, Gas Mark 4 and line some baking sheets with parchment paper.

�

2. Mix together the flour, baking powder and salt in a mixing bowl and set aside.

�

3. In a separate large mixing bowl, cream� together the butter and sugar until light and fluffy.�

�

4. Add the egg and egg yolk and beat until light and creamy then beat in the lime juice and zest until well mixed.�

�

5. Fold the flour mixture into the egg mixture to form a soft dough then form into 12mm/1/2-inch balls.�

�

6. Place the balls on the prepared baking sheets, well apart and bake for 10-12 minutes until golden brown.

�

7. Transfer to a wire rack, sprinkle with icing sugar and allow to cool completely.
