Olive Oil and Lemon Biscuits Veg CD CBF 35mins
Makes 30 Cold Vegetarian Vegan Cookies Baked Fayre Teatime Eggless
Ingredients 100g/4oz Unbleached Flour 100g/4oz Sugar 1/4 teasp Bicarbonate of Soda 90ml/3fl.oz. Extra virgin Olive Oil 2 teasp grated Lemon Zest 3 drops Lemon Oil A squeeze of Lemon Juice
Instructions
1. Preheat the oven to 180C, 350F, Gas Mark 4 and line 2-3 baking sheets with parchment paper.
2. In a large mixing bowl, mix together the flour, sugar and bicarbonate of soda.
3. In another bowl, mix all liquids together then add to the flour mixture, stirring until well blended.
4. Using your hands, roll the dough into 2.5cm/ 1-inch balls then place the balls 5cm/2-inches apart on the lined baking sheets. Bake for 15 minutes. Cool on wire racks.
