Fayre Ingredients 100g/4oz
Butter, softened 225g/8oz
Sugar 2
Eggs 200g/7oz
Plain Flour ½
teasp salt 1
teasp Baking Powder 60ml/2fl.oz.
Sour Cream 1
teasp Vanilla Extract 1
teasp Almond Extract 2
large Ripe Pears, peeled and diced 50g/2oz
Pine Nuts, toasted Instructions 1.
Preheat the oven to 180C, 350F, Gas Mark 4 and lightly oil
a loaf tin with oil. Set
aside. 2.
In a large mixing bowl, cream together the butter and sugar until pale and
fluffy. 3.
Add the eggs, one at a time, mixing thoroughly between each addition. 4.
Add the flour, baking powder, salt, sour cream, vanilla and almond extracts, and
beat well. 5.
Fold in the diced pears and the pine nuts then pour into the loaf
tin and bake for 1 hour. Cool on a wire rack.
