Saffron Biscuits Veg CD CBF 50mins
Makes 24 Cold Vegetarian Cookies Baked Fayre Teatime
Ingredients 100g/4oz Butter, melted 100g/4oz Sugar 1 small Egg, well beaten 175g/6oz Plain Flour A pinch Salt 1 teasp Baking Powder 1/4 teasp Powdered Saffron Angelica to decorate
1. Preheat the oven to 180C, 350F, Gas Mark 4 and line baking sheets with parchment paper.
2. In a large mixing bowl, mix the butter with the sugar until it forms a light paste.
3. In a small cup, mix the saffron with a teaspoon of water then add it to the butter and sugar.
4. In another bowl, mix together the flour, salt and baking powder.
5. Add the flour to the butter mixture and mix well.
6. With floured hands knead the paste until smooth then form into 24 balls. Stick a little piece of angelica into each ball then place them on the prepared baking sheets. Bake for 25 minutes. Cool on wire racks.
