Butter 100g/4
oz Cheddar Cheese, finely grated

1. Preheat the oven to 200C, 400F, Gas Mark 6 and lightly grease some baking sheets. 2.
Place the flour, salt and pepper in mixing bowl and mix well then rub the butter
into the flour mixture with your fingertips until the mixture resembles fine
breadcrumbs. 3.
Stir in the cheese and sesame seeds and blend thoroughly. 4.
In a small bowl or cup, mix together the soy sauce with half the water then add
to the flour mixture and start to mix, adding more water a little at a time
until the dough comes
together. 5.
Turn out onto a lightly floured surface and roll out to 3mm/1/8 inch thick.
6.
Cut the dough into 5cm/2-inch squares with pastry wheel or knife, place
on the greased baking sheets and bake for 10 minutes, or until lightly browned.
7.
Cool on wire racks.
