Sesame Cheese Crackers    Veg  CD CBF   25mins


Cold  Vegetarian  Savoury  Biscuits Eggless



100g/4oz Plain  Flour 

1/2  teasp  Salt 

teasp  Cayenne Pepper 

75g/3oz  Butter

100g/4 oz  Cheddar Cheese, finely grated 

3 tbsp  Toasted Sesame Seeds 

Approx 2 tbsp Cold Water




1.  Preheat the oven to 200C, 400F, Gas Mark 6 and lightly grease some baking sheets.


2. Place the flour, salt and pepper in mixing bowl and mix well then rub the butter into the flour mixture with your fingertips until the mixture resembles fine breadcrumbs.


3. Stir in the cheese and sesame seeds and blend thoroughly.


4. In a small bowl or cup, mix together the soy sauce with half the water then add to the flour mixture and start to mix, adding more water a little at a time  until  the dough comes together.


5. Turn out onto a lightly floured surface and roll out to 3mm/1/8 inch thick.


6.  Cut the dough into 5cm/2-inch squares with pastry wheel or knife, place on the greased baking sheets and bake for 10 minutes, or until lightly browned.


7. Cool on wire racks.

Cream - to - The process where sugar and softened butter are beaten together with a wooden spoon, until the mixture is light, pale and well blended. This process may also be carried out with a hand held mixer or in a food processor.

Rub in -  The incorporation of fat into flour.  Butter is cubed then gently rubbed between the thumb and forefinger, lifting the mixing at the same time, until the fat is fully incorporated and the mixture resembles breadcrumbs.
