Vegan Mincemeat
Muffins Veg CD CBF 40mins plus cooling
Makes 12 Cakes Cold Vegetarian Vegan Cake
Baked Fayre Christmas Dairy Free Eggless

You can use ordinary mincemeat for a non-vegan/vegetarian version
Ingredients
1 tbsp Demerara Sugar
½ teasp Cinnamon
350g/12 oz Self Raising Flour
15ml/1 tbsp Baking Powder
175g/6 oz Caster Sugar
150ml/5 fl.oz. Sunflower Oil
330ml/11 fl.oz Water
150g/+5 oz Vegan Mincemeat
Instructions
1. Preheat the oven to 190C, 375F, Gas Mark 5 and lightly oil a 12 hole muffin
tin. In a small bowl, mix together the Demerara sugar and cinnamon and set
aside.
2. Sieve the flour and baking powder together into a large mixing bowl then add
the caster sugar and mix well.
3. Make a well in the centre of the flour mixture the pour in the oil and water
and mix working as quickly as possible. Do not over-mix.
4. Quickly fold in the mincemeat then spoon into the oiled muffin tin.
5. Sprinkle with the Demerara and cinnamon mixture then bake for 15-20 minutes
until risen and golden brown. Cool on a wire rack.
