Almond Shortcrust Pastry Recipe

An alternative to ordinary shortcrust pastry which is particularly good when used with apple or pear desserts

 

Yield: Makes approx. 225g/8oz Total time Keywords:  Cold Vegetarian Nuts Pastries Baked Fayre Teatime

 

Ingredients

50g/2oz Ground Almonds
100g/4oz Plain Flour
25g/1oz Caster sugar
A pinch of Salt
50g/2oz Butter
1 tbsp Clear Honey
1 Egg Yolk
Almond Essence

Instructions

 

1. Mix together  the ground almonds, flour, sugar and salt in a large bowl.

 

2. Make a well in the middle and put in the butter, honey, egg yolk and almond essence then using a knife start mixing the ingredients until they start to come together to form a dough.

 

3. Knead until smooth.

 

3. Wrap the pastry in clingfilm and rest in the refrigerator for 30 minutes before rolling out.
