Apple Scones Recipe

Scones with grated apple added to the mixture before baking

Ingredients

225g/8oz self raising flour
50g/2oz Caster Sugar
½ teaspoon Salt
50g/2oz Butter
2 Apples, peeled and grated
A little milk to bind
 

Instructions

 

1. Preheat the oven to 200C, 400F, Gas Mark 6 and lightly grease a baking tray.

 

2.In a large mixing bowl, mix together the sugar flour and salt then rub in the butter until crumbly.

 

3.Stir in the grated apple and enough milk to form a soft dough.

 

4. Turn onto a floured board and knead gently until smooth then divide the mixture into two and flatten each piece out into 15cm/6-inch circles.

 

5. Mark each circle off into 4 place on the baking tray and bake for 15 minutes. Cool on wire racks.

Key Techniques used in this recipe

 

Rubbing in  - The incorporation of fat into flour.  Butter is softened and cubed then gently rubbed between the thumb and forefinger, lifting the mixing at the same time, until the fat is fully incorporated and the mixture resembles fine breadcrumbs in appearance.

 

Knead - A rhythmic action in dough making whereby one end of the dough is secured by the heel of one hand and  stretched away, then pulled back over the top.
