Butter Squares Veg CD CBF 30mins plus proving Makes 12 Cold Vegetarian Nuts Pastries Baked Fayre
Ingredients 15g/1/2oz Fresh Yeast 150ml/5fl.oz.Lukewarm Milk 1 teasp Caster Sugar 225g/8oz Plain Flour A Pinch of Salt 50g/2oz Softened Butter 50g/2oz Caster Sugar For the topping 50g/2oz of butter 50g/2oz Sugar 1 teasp Cinnamon 50g/2oz Flaked Almonds
Instructions 1. Blend the yeast with half of the lukewarm milk, add 1 teaspoon of sugar and stir until dissolved. Put flour in a bowl. Make well in centre and add yeast mixture. Stir in a little flour, cover and leave until frothy. 2. Add the rest of the lukewarm milk, salt, butter and sugar, and mix to make a soft, bubbly paste. With well floured hands, pat the dough level on a well greased baking sheet. Cover with oiled clingfilm and leave until doubled in size. 3. Preheat oven to 190C, 375F, Gas mark 5. 4. In a bowl, mix together the sugar, cinnamon and almonds. Put the butter in flakes on the top of the cake then sprinkle the sugar mixture over the top. Bake for about 20 minutes. Cut into squares before completely cold.
