Cider Cake recipe Veg CD CBF English 55minsMakes 1 x 18cm/7 inch cake Cold Vegetarian Alcohol Cakes Baked Fayre England British Europe Ingredients: 100g/4oz Butter 100g/4oz Sugar 2 Eggs, beaten 225g/8oz Plain Flour 1 teasp Bicarbonate of Soda 1 teasp Freshly Grated Nutmeg 150ml/5fl.oz. Sweet Cider Instructions 1. Preheat the oven to 180C, 350F, Gas mark 4 and well grease an 18cm/7inch square baking tin. 2. In a bowl, cream together the butter and sugar until pale then add the eggs a little at a time beating between each addition. Sift together the flour, nutmeg and soda then add half to the egg mixture. Pour the cider over and beat the batter well until it begins to froth. 3. Stir in the remaining flour then quickly pour into the prepared tin and bake in the oven for 40 minutes. The cake will shrink away from the sides slightly. Turn on to a wire rack to cool.
