Milk 75g/3oz Butter, cut into small pieces 425g/15oz Self Raising Flour 100g/4oz Sugar 120ml/4fl.oz. Dark Rum 2 Egg Whites, stiffly beaten Instructions 1. Preheat the oven to 180C, 350F, Gas mark 4 and grease and line a shallow 25cm/10inch square cake tin with greaseproof paper. 2. Heat the milk in a pan to almost boiling point then remove from the heat and add the butter. Once the butter melts, gradually stir in the flour then add the sugar, rum and figs. 3. Fold in the egg whites then pour the mixture into the prepared tin. Bake in the oven for 50 minutes. Turn onto a wire rack to cool.
