Cold Vegetarian Biscuits Cookies Baked Fayre Ireland Europe
Ingredients:
250g/9oz Plain Flour
250g/9oz Butter
250g/9oz Caster Sugar
25g/1oz Ground Almonds
Milk
75g/3oz Icing Sugar
3 tbsp Cold Water
2 drops Peppermint Essence
Green Food colouring
Instructions
1.
Preheat the oven to 190C, 375F, Gas Mark 5 and very lightly butter some baking
2.
Place the flour in a large mixing bowl and rub in butter with your fingertips.
3. Sir in the sugar and almonds and enough milk to make a firm dough.
4. Turn onto a floured surface and roll out thinly.
5. Cut into shamrock shapes and place on the baking sheets. Bake for 10 minutes or until golden brown. Cool on a wire rack.
6. In a small bowl, mix together the icing sugar, water, peppermint essence and food colouring. Use to thinly coat the tops of the cooled biscuits and allow to set.
